Energy Bites

Energy Bites are a healthy snack option perfect for those busy weeks.

I consider these a good alternative to granola bars since they don’t have all of the added sugars and preservatives and kids love them!

These are super easy to make and no baking is required.  Here is what you need:

  • 2 cups toasted coconut flakes
  • 2 cups old fashioned oats
  • 1 cup craisins or any dried fruit that you like
  • 1 cup of oat bran of flax
  • 1 cup sunflower seeds
  • 2/3 cup honey
  • 1 cup peanut butter or any nut butter (chunky or creamy)
  • 2 teaspoons vanilla

You really can’t screw up this recipe.  Any of the ingredients can be replaced with other options such as almonds, soy nuts, or even dark chocolate pieces.  You do however need to use the peanut butter and honey since these ingredients are the glue of this recipe.

Mix all of the ingredients together and form golf size balls.

Store in an airtight container and refrigerate.  You can keep these for up to a week.

Enjoy : )
